The best pizza?

I have had lots of pizza experience and I think I may have recently had the best one ever…and it wasn’t in Italy. Tinderbox Kitchen is the new restaurant by P J McMillan in James St, Fortitude Valley in Brisbane.

P J’s other restaurant, Harveys, is a favourite of mine and now I will be torn between that and Tinderbox. The new restaurant is built around an enormous wood fired pizza oven and it is from here the wonderful pizza emerged.

It is called the Tinderbox and has a topping of prawns, tomato, zucchini,mozzarella and basil…too delicious for words, but the best part of the pizza is the base. It is thin, crunchy and chewy with excellent flavour.

I shared one with a friend and we had side orders of farro salad and kipfler potatoes, also delicious.

I would suggest a trip to Tinderbox very soon to try the pizza…and I would love to hear about your favourite pizza.

  2. We don’t have a tinderbox restaurant, so I don’t know how their pizza tastes. we have others they maybe different from the ones you get.

  5. Goodness, that looks good! Believe it or not, we have pretty good pizza here in Cuenca–though I’m sure not as good as you have shared here or what’s available in Italy, but pretty darn good.

  6. It looks delicious! If you ever go to Buenos Aires, you will be surprised by the pizza and pasta served there. Top quality and really yummy! But then, many Argentinians are of Italian ancestry.

  8. Tinderbox- been twice and both times very impressed -delicious roast shoulder of lamb, great Pizza and the best grilled peaches . PJ and his team do it very well at both Harveys and Tinderbox.

  11. Looks delicious!! I think it would be agin-the-rules in Italy, but who cares? My pizzaiolo down the road has been doing a pizza with creamed pumpkin and smoked cheese plus porchetta! Wonderful and not to be found on the menu!

    • It wouldn’t be too far away from being acceptable in Italy. Perhaps the prawns would be a bit out of place, but there wasn’t too much topping.

  13. Ok, I’ll undertake to do further research:). The faro salad sounds interesting, I haven’t tried faro or freekeh, but I think we will definitely need to go for the slow roasted lamb – wood fired ovens give such good flavour – and pizza crusts.

    Pizza usually have a tomato base…
    You can call this Focaccia or schiacciata like we call in Tuscany…
    Do you know egiptian invent Pizza base…
    Do you know a Sailor from Genova Bring the recepie in Italy and an old woman from naples stole the recepie…
    Do you know why we call our tomato and mozzarella Pizza Margherita??

    • Thank you for the extra information. I didn’t know about the base coming from Egypt. I have had wonderful pizzas in Napoli and here in Bagni di Lucca.
